Leftover Pot Roast Chicken Fried Steak

Serves 4 People

Ingredients

  • 1 lb ground pork

  • ½ lb leftover pot roast

  • 2 cups leftover pot roast gravy  or drippings mixed with water

  • 1 cup panko bread cribs

  • 1 egg

  • ½ lb mushrooms; sliced

  • 1 medium onion; diced

  • 3 tbsp worcestershire sauce

  • 1 tbsp chili crisp

  • 3 cloves garlic; minced

  • 2 tablespoons flour

  • ¼ cup neutral oil

Preparation

  1. Preheat oven to 325 F

  2. Make meat mixture. Rince pot roast over a bowl to leave only the pot roast and add liquid to gravy. Chop the pot roast into ½ inch pieces and add to a large bowl.

  3. Add pork and egg and mix vigorously. Divide into 4 pieces and make into patties.

  4. Coat meat patties in panko bread crumbs and set aside on a baking rack.

  5. Fry patties in oil in a large frying pan. Flipping when the coating is brown.

  6. Move patties to the oven to finish cooking.

  7. Make Gravy; add onions and mushrooms to the frying pan and reduce heat to low. Cook until mushrooms have given up their moisture and started to brown. Add remaining ingredients and cook over low heat until gravy stops thickening.

  8. Serve over mashed potatoes.
