Grilled Chicken Wild Rice Soup

Serves 8 People

Ingredients

  • 6 boneless skinless chicken thighs

  • 1/4 tsp salt

  • 1/4 tsp pepper

  • 1/4 tsp garlic powder

  • 1/4 lb. bacon

  • 2 Tbs flour

  • 3 cups water

  • 3 Tsp chicken bouillon powder

  • 4 cups milk

  • 1 cup uncooked wild rice

  • 1 cup chopped celery

  • 1 large onion

  • 1/2 cup chopped carrots

Preparation

  1. Prepare chicken by seasoning with salt, pepper, and garlic powder. Cook on grill until browned on both sides. Cut into pieces and reserve for later, chicken will finish cooking in soup.

  2. Fry bacon in a large pot and reserve for later.

  3. Add vegetables and sauté until onions are translucent.

  4. Add Rice to pot and 3 cups of water. Simmer for 45 minutes or until rice is cooked.

  5. mix flour and bouillon powder then whisk into soup, add chicken and bacon, then cook until chicken finished cooking

  6. Add milk until soup is desired thickness and serve.
