White Chocolate Chip Rhubarb Muffins

Serves 4 People

Ingredients

  • 2 ½ Cups all-purpose flour

  • 2/3 cup sugar 

  • 3 tsp baking powder 

  • One cup buttermilk 

  • Quarter cup oil 

  • Half teaspoon vanilla 

  • One egg beaten 

  • 2 cups rhubarb 

  • Half cup white chocolate chips

Preparation

  1. Mix dry ingredients. Add rhubarb and chocolate chips and then say set aside okay 

  2. Mix all liquid ingredients; in a separate bowl. Add the liquid ingredients into the dry ingredients mix until it Incorporated.

  3. Fill muffin tins ⅔ full, and spray with nonstick cooking  spray

  4. Bake at 400°. for 25 minutes until toothpick comes in clean comes out clean
