White Chocolate Chip Rhubarb Muffins
Serves 4 People
Ingredients
2 ½ Cups all-purpose flour
2/3 cup sugar
3 tsp baking powder
One cup buttermilk
Quarter cup oil
Half teaspoon vanilla
One egg beaten
2 cups rhubarb
Half cup white chocolate chips
Preparation
Mix dry ingredients. Add rhubarb and chocolate chips and then say set aside okay
Mix all liquid ingredients; in a separate bowl. Add the liquid ingredients into the dry ingredients mix until it Incorporated.
Fill muffin tins ⅔ full, and spray with nonstick cooking spray
Bake at 400°. for 25 minutes until toothpick comes in clean comes out clean
