Beef Fajitas

Serves 4 People

Ingredients

  • 1 lb eye of round beef steak

  • 2 tbsp green pepper seasoning

  • 1 cup pico de gallo

  • 1 small onion

  • 1 green pepper

  • 1 batch Spanish rice

  • 8 corn tortillas

  • 1 jar avocado salsa

  • hot sauce

  • 1/4 tsp salt & pepper

Preparation

  1. Prepare meat. Cut steak into 1/2 inch strips.

  2. Cook rice. Add pico de gallo to rice before cooking.

  3. Cook Fajita Mix. Cut onion and pepper into strips. Sauté on medium heat until charred. Add seasoning to pan. Add beef and cook until 145 F.

  4. Assemble. Heat tortillas in a dry pan until fragrant. Assemble tableside.
